Conduction

First there is conduction which is the way heat transfers to the pot or pan. This is where the different materials cause different effects in terms of how fast the cooking vessel heats up and how fast the food cooks.

Convection

The second way food cooks is convection which is actually the result of conduction. As a sauce pan heats up and heat is transferred to the liquids, they usually boil. The boiling liquid transfers heat to the food that you are cooking through convection. This method does not directly have anything to do with cookware materials except the better the conduction of the materials, the faster the liquid boils!

Copper

Copper is a great conductor! Copper pots and pans heat up very quickly and evenly. This characteristic makes copper the best choice for frying and sautéing. Copper is also a good choice for almost every other kind of cooking.

So why don’t you see all copper pans? First copper is very expensive. More importantly copper reacts with everything. When it comes into contact with food it causes a metallic taste and sometimes the reaction forms poisonous substances that mix with the food.

To solve these problems, copper pots can be lined with a stable metal such as stainless steel. Usually, due to the expense a stainless steel pan is lined with a copper bottom for good conductivity.

Aluminum

Aluminum is a good conductor of heat. It is an inexpensive material. It is also lightweight and durable. The only drawback to using aluminum is that it reacts to acidic and alkaline foods affecting the taste of food cooked in it. To fix this aluminum is usually coated with stainless steel. It can also be anodized or can be coated with a nonstick material, both solve the corrosion problem.

Aluminum pots and pans can be used to make all types of cookware, but it is especially good for frying and sautéing because it heats quickly.

Stainless Steel

Stainless steel cookware is moderately priced. It is the most popular cookware because it keeps its bright shine and does not denting easily. The only problem with stainless steel is that it does not conduct heat well. To fix this problem, pots and pans made from stainless steel usually have a thick aluminum or copper core in the bottom of the pan to help conduct heat more evenly and quickly.

Stainless steel is a good material for any type of cooking because it does not corrode and does not react with alkaline or acidic materials.

Non-Stick
